Spanish meatball with butter bean stew:
Lean pork mince (350g)
Can butter beans, drained (400g)
Cans chopped tomatoes (2 x 400g)
Olive oil (2 tsp)
Chopped large red onion (1)
Golden caster sugar (2 tsp)
Sliced peppers (2)
Crushed garlic cloves (3)
Sweet smoked paprika (1 tbsp)
Small bunch parsley, (chopped)
Crusty bread to serve
Season the pork by using your hands and shape into small
meatballs. Heat oil in a large pan and drop the meatballs on it. Cook for 5
minute until golden brown all over. Push it to one side of the pan and drop the
onion and peppers. Then Cook it for a further 5 minutes. Stirring now and then
until the veg has softened. Then mix it in the garlic and paprika. Mix
everything in the pan for 1 min. After that, add the tomatoes. Cover with a lid
and boil for 10 minute.
After 10 minutes, uncover the lid. Mix in the beans, the
sugar and some seasoning and boil for a next 10 minute. Uncover it just before
serving, mix in the parsley. Dish up with crusty bread for dunking.
